I was wondering if anyone is aware of a Mediterranean veggie recipe you’d like to share.

I actually have no idea if anyone is aware of this particular recipe, but I have a feeling I am one of those people. It’s one of those things I just make when I’m in the mood: a veggie meal that I can whip up quickly and eat pretty much every day. Sometimes I eat it with olive oil and sometimes I eat it with fresh tomatoes.
