This is a great recipe for an elegant meal. If you want to get real fancy you can add a few more ingredients like a few pinches of roasted garlic or some chopped hard-boiled eggs.

Of course, there is that pesky ingredient called rice. You need it for making rice-based stews, and since rice is an important ingredient in the making of stuffed peppers, you need it for that.

For those of us who are not into rice, there are a few other good options. If you don’t mind being a bit fussy though, you can make your own.
